Great for a Cold, Snowy Evening

Last night for dinner I made meatloaf with a new recipe. My family gave it a thumbs up. It was the perfect meal for a cold, snowy evening.

Traditional Meatloaf

1 egg, beaten
2/3 cup milk
3 slices of bread, crumbled
1 cup (4 ounces) shredded cheddar cheese
1 medium onion, chopped
1/2 cup finely shredded carrot
1 tsp salt
1/4 tsp pepper
1 1/2 pounds ground beef
1/4 cup packed brown sugar
1/4 cup ketchup
1 tbsp prepared mustard
 

In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Shape into loaf. Place in a greased 9x5x3 loaf pan.

In a small bowl, combine the brown sugar, ketchup and mustard; spread over loaf. Bake at 350 degrees for 60-75 minutes or until no pink remains. Drain. Let stand for 10 minutes before slicing.

* I served this with baked potatoes, corn and Poppy Seed bread. YUM!
